Classic Potato Soup with Bacon and Cheddar

I love that this recipe makes a HUGE pot of soup. It’s enough for a crowd, but we often make it just for the two of us and freeze the extras for quick lunches.

Ingredients for 12 servings

Potato Soup
7 slices thick cut bacon, cut into 1 inch pieces
2 1/2 cups celery, diced
2 1/2 cups carrots, diced
2 1/2 cups onion, diced
1/2 cup white wine
6 large Russset potatoes, cut into 1/2 inch cubes
4 cups chicken stock
1 tablespoon sea salt
1 tablespoon dried chives
3 cups whole milk
1/2 cup heavy cream
3 1/2 ounces cheddar cheese, grated

Optional garnish
scallions
sour cream
cheddar cheese
