Banana Carrot Muffins that are deliciously moist, soft and fluffy. They’re bursting with banana flavour and you can’t even taste the carrot.

Ingredients for 10 servings

1 1/2 cups Spelt Flour
1 tsp Baking Powder
1 tsp Baking Soda
3/4 cup Monkfruit Sweetener
3 medium Ripe Bananas
1 cup grated Carrot
1 medium Egg
1/3 cup Coconut Oil (melted)
1 tsp Vanilla Extract
1 teaspoon Ground Mixed Spice
