Cake in a Jar

Cake in a jar recipe – Cute, festive and great for the times you crave a slice of cake, but don’t want to buy a whole big cake.

Ingredients for 6 servings

For the cake layers:
3 large eggs at room temperature
1/2 cup granulated sugar
1/2 cup all-purpose flour
½ tsp baking powder

For the lightened up pastry cream:
5 tablespoons granulated sugar, divided
2 egg yolks
1/3 cups all-purpose flour
1/4 teaspoon salt
1 cup milk
1/2 teaspoon vanilla extract
1 cup heavy cream

Other:
1/2 cup raspberry preserves (or any fruit preserves)
1 cup simple syrup
1 tbsp lemon juice
