Courgette and Basil Soup with Focaccia Toast

A quick and easy soup made with courgettes, fresh basil and a hint of Parmesan.

Ingredients for 4 servings

3 tbsp butter plus extra for the toast
1 large onion coarsely chopped
2 large garlic cloves crushed
1 small potato peeled and cubed
3 large courgettes sliced
1 Parmesan rind
1 litre chicken stock I use Essential Cuisine granules
handful basil leaves plus extra to garnish
125 ml double cream
sea salt to taste
freshly ground black pepper to taste
4 slices focaccia bread
