This tortilla bake is made using a combination of naturally low fat turkey, vegetables and beans for maximum flavour and goodness. It’s quick and easy to prepare and perfect as a healthy weeknight dinner the whole family will love.
Ingredients for 5 servings
500 g ground turkey approx. 7% fat
1 red onion roughly chopped
1 red bell pepper roughly chopped
1 green bell pepper roughly chopped
3 garlic cloves peeled, roughly chopped
1 green chili pepper roughly chopped
3 tbsp olive oil plus 2 more for drizzling on top
400 g chopped tomatoes canned
250 g black beans from a can
2 tbsp tomato paste
2 tbsp sweet chili sauce
1 tsp ground coriander, cumin and coarse sea salt each
⅔ tsp onion granules
130 g mature cheddar coarsely grated
5 tbsp freshly chopped cilantro/coriander
3 large tortilla wraps
