Curried Couscous Salad

Ingredients for 8 servings 10 ounces couscous 1 tablespoon butter 1 1/2 cups boiling water 1/4 cup olive oil 1/4 cup yogurt (Greek or regular) 1 teaspoon red wine vinegar salt and freshly ground black pepper 1 teaspoon curry powder 1/4 teaspoon ground turmeric 1/2 cup grated or finely diced carrots 1/2 cup dried cranberries 1/4 cup sliced almonds 1/4 cup finely chopped red onions 3 scallions. thinly sliced Read the Instructions here  

Whole Wheat Couscous and Chickpea Tabbouleh

Lentil and Couscous Stuffed Peppers

Recipe yields 8 stuffed peppers (which I’d say is 4 servings, since these are light!).
