Tropical Chipotle Chicken Enchiladas

Ingredients for 4 servings

1 pound boneless, skinless chicken breast
1 tablespoons chipotle chili powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
salt and black pepper
3 jalapenos
2 1/2 – 3 cups salsa verde
1 1/2 cups cooked white rice
1/2 cup fresh cilantro, chopped (divided)
8-10 flour tortillas
1 cup cotija cheese, crumbled
1 cup monterey jack cheese, shredded
1 large mango, peeled, pitted and diced
1 cup diced pineapple
juice and zest from 1 lime
Serve with: avocado, additional cilantro, limes, and sour cream
