These chicken tenders were so incredibly moreish yet beautifully satisfying. I served them up with some roast sweet potato rounds and handful of greens.
Ingredients for 1 serving
2 tbsp (25g) gluten free oats, ground to a coarse crumb
145g (5oz) skinless boneless chicken breast
1 tbsp egg white
1/4 tsp paprika
1/4 tsp cumin
1/4 tsp ground coriander
1/4 tsp Pink Himalayan Rock Salt
1/2 tsp melted coconut oil for cooking (melted and poured into a spray container!)
