Sheet Pan Garlic Lemon Chicken and Mushrooms

Made with boneless skinless chicken thighs, baby portabella mushrooms, lemons and finally drizzled in a garlic parsley sauce.

Ingredients for 4 servings

For sheet pan chicken:
6 boneless skinless chicken thighs
Kosher salt, to taste
Black pepper, to taste
1 pound sliced baby portobello mushrooms
1 lemon, thinly sliced
1 tablespoon olive oil
5 springs fresh thyme, leaves removed

For garlic parsley sauce:
1/3 cup finely minced parsley
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon grated garlic
