The Big Greek Salad

This salad is a go to when I crave something healthy and delicious. Load it up with some chicken or shrimp for a hearty dinner salad. My homemade dressing is easy to whip up and so much better than those bottled dressings.

Ingredients for 4 servings

Stale Bread Cubed
1 Tablespoon olive oil
¼ teaspoon salt
¼ teaspoon pepper

Balsamic Dressing
½ cup olive oil
¼ cup balsamic vinegar
1 teaspoon Dijon mustard
1 Tablespoon + 1 teaspoon brown sugar
½ teaspoon salt
¼ teaspoon pepper
pinch of dried oregano

3 cups of romaine lettuce (or a bag), chopped
½ cup carrots, chopped
½ cup cucumbers, chopped
½ cup mushrooms, sliced
½ cup tomatoes, chopped
½ cup green bell peppers, chopped
1 Tablespoon Kalamata olives, chopped
¼ cup feta cheese
