Braised Daikon with Salted Pork and Glass Noodles

The beauty of Chinese salted pork is that it’s really a flavor agent like soy sauce or white pepper. It adds tons of complexity and umami deliciousness to dishes, so I do hope this post gives you some inspiration and the freedom to improvise with your salted pork!

Ingredients for 4 servings

3 tablespoons oil
3 cloves garlic
3 scallions, the white and green parts separated
5 ounces salted pork belly, sliced
1½ pounds daikon radish, cut into small pieces
3½ cups chicken stock
2 small bundles of mung bean glass noodles (approximately 75 grams)
½ teaspoon sesame oil
¼ teaspoon white pepper
Salt, to taste
