These healthy homemade peanut butter breakfast bars are sweetened with Stevia and Honey, and packed with protein and whole-grain goodness.
Ingredients for 20 bars (a 9×13 inch pan)
1 cup dry roasted unsalted almonds (roast raw almonds at 375 degrees for 10 minutes)
½ cup roasted, salted peanuts
4 cups old fashioned oats
1 tsp ground cinnamon
1½ tsp baking soda
1 tsp kosher salt
8 tbsp salted butter, at room temperature
1 cup stevia
¼ cup unsulphured molasses
⅓ cup honey
5 large eggs
1 cup smooth peanut butter
1½ tsp pure vanilla extract
