Easy Cheesy Potato Casserole

Slices of Yukon Gold potatoes are tossed with rendered bacon fat, fresh rosemary and seasonings before being poured into a buttered baking dish.

Ingredients for 8-10 servings

Butter to coat a 9×13-inch baking dish
½ pound bacon, uncooked and chopped
3 pounds yellow potatoes such as Yukon Gold, peeled and sliced ¼-inch thick
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
¼ cup fresh rosemary chopped
1 pound sharp cheddar, shredded
8 ounces cream cheese, softened
1 cup mayonnaise
1 cup scallion bottoms
Remaining scallion green tops, sliced
