French Onion Soup – caramelized onions in beef broth, topped with a toasted crouton and broiled gruyère cheese.

Ingredients for 4 servings

6 tbsp unsalted butter
5 sliced onions
3 garlic cloves, chopped (not minced)
2 bay leaves
1 tsp dried thyme
½ tsp paprika
½ tsp salt
½ ground black pepper
¾ cup red wine i.e. Burgundy Village (Pinot Noir)
3 tbsp all-purpose flour
2 quarts beef broth
½ sourdough loaf cubed into 1 inch pieces
½ pound grated Gruyère
¼ cup brandy or cognac
1 tbsp olive oil
