Slow Cooker Lemon and Potato Chicken

This lemon and potato chicken is an entire meal in and of itself, but you could also throw in some fresh or frozen green beans to bulk up the meal and add nutrients.

Ingredients for 6 servings

12 boneless, skinless chicken thighs
1 teaspoon kosher or sea salt
1 teaspoon black pepper, divided
2 tablespoons olive oil, divided
2 medium potatoes peeled and cubed
2 garlic cloves, minced
1 cup chicken broth (fat free, low sodium)
1/4 cup freshly squeezed lemon juice
1/4 cup flour (optional: cornstarch)
1 lemon, sliced for garnish
