Vegan Almond Flour Banana Bread

A vegan and paleo banana bread made with almond flour and coconut sugar. It’s surprisingly moist, and oil-free!

Ingredients for a 9 x 5-inch loaf pan

3 very ripe bananas (fresh or thawed from frozen)
2½ cups almond meal/flour
½ cup arrowroot starch
½ cup coconut sugar
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
2 teaspoons ground cinnamon
1 tablespoon apple cider vinegar
