1/2 large onion, chopped

8 oz. mushrooms, sliced
1 green pepper, chopped
1 poblano pepper, diced
4-6 garlic cloves, minced
1/3 cup flour
4 cups low sodium chicken broth
1 (10.5 oz.) can beef consommé **
2 tablespoons cornstarch
1 teaspoon dried parsley
1/2 tsp EACH dried oregano, paprika, ground cumin

1 cup shredded sharp cheddar cheese
1 cup shredded provolone cheese
1/4 cup freshly grated Parmesan cheese

1 cheese baguette cut into 1/2-inch cubes
3 tablespoons olive oil
