Quinoa Fried Rice

Fried rice is made healthier by swapping out rice with quinoa. It makes an easy and delicious gluten-free meal packed with all the nutritious benefits of quinoa.

Ingredients for 4 servings

2 cloves garlic, minced
2 tbsp olive oil
1 cup uncooked quinoa, cooked according to package instructions
1 heaping cup frozen peas and carrots
2 eggs, whisked
2-3 tbsp low sodium soy sauce (or more as needed)
1 tsp sesame oil
2 green scallions, thinly sliced
