1 teaspoon sugar
1/8 teaspoon white pepper
1 teaspoon oyster sauce
1 teaspoon sesame oil
1 teaspoon Shaoxing rice wine
1 egg white ,lightly beaten
2 green onion ,finely chopped
1 1/2 teaspoons vegetable oil
2 Chinese eggplants

Sauce:
2 tablespoons oyster sauce
1 teaspoon sugar
1/2 teaspoon cornstarch
1 clove garlic ,minced
1 green onion ,chopped
